About the Nitrogen-Washed Coffee Process:
Ripe coffee cherries are cooled to 12°C to preserve flavor, then deground and fermented in a bioreactor with selected yeast and bacteria. Nitrogen injection stimulates microbial activity while temperature, acidity, and Brix levels are monitored. The beans are sun-dried to a moisture content of 40% and then mechanically dried to a moisture content of 10-12%. After a 45-day rest period, they are hulled and prepared for export, ensuring their vibrant flavor.
